I don’t even have the phone number of most of my contacts, some don’t even have a phone number, so I’m glad I don’t have to use Signal for those either. ^^

It wouldn't. You need a phone number for Signal (though it doesn't have to be one associated with the device you install on... e.g. you can use a VoIP number or landline)

LPS, yes ... there was a demand for the features (offline when not at work, using your own device, no phone number reqired) within the company and XMPP was the solution. - It's still in beta with a limeted number of people testing it, but I think it will become official within the year.
